What’s for Dinner

Avocado Lime Salad


Lettuce, chopped

2 Tomatoes, chopped

1 cucumber, sliced

1 can black beans, drained and rinsed

2 cups of Easy Guacamole (see below)


2 tablespoons of avocado, mashed

The juice of 2 limes

½ c olive oil

¼ c sugar

1 teaspoon salt

Toss lettuce, tomato, cucumber and beans in large bowl.

Combine all dressing ingredients in smaller bowl and whisk together.

Drizzle dressing over salad.  Toss.  Serve guacamole on the side of the plate         or spoon guacamole around edges of salad and serve immediately.

Easy Guacamole

2 avocados, sliced and scooped out

2 tablespoons of red onion, chopped small

1 tablespoon lime juice

Salt and pepper, to taste


Combine all ingredients and stir until desired consistency.  Use as a topping for salads or a spread on sandwiches.
